Bake-Along #27: Brown Sugar Peach Dump Cake

Yes, you CAN make dump cake from scratch! And it's almost as easy as using the canned stuff. For tips and to bake-along live, just follow along with the video.


Prep: 20 minutes

Bake: 30-40 minutes


Peach Pie Filling

  • 2-3 Yellow Peaches

  • 1/4 cup granulated sugar

  • 1/4 cup light brown sugar

  • 1/2 t ground cinnamon

  • 1/4 t ground ginger

  • 2 T cornstarch

  • 1/2 cup water

  • 1 t lemon juice

  • 1/2 t lemon zest

  • 1/2 t vanilla extract


Brown Sugar Cake Topping

  • 3/4 cup all-purpose flour

  • 1/4 cup light brown sugar

  • 1/2 t salt

  • 1 t baking powder

  • 1/4 cup salted butter (melted)

  • 1/2 t vanilla extract


  1. Pre-heat oven to 350°F.

  2. Grease a 9x9 inch casserole dish.

  3. Peel and slice your peaches, then cut each slice in half.*

  4. Whisk together the sugars, spices, and cornstarch.

  5. In a medium saucepan combine the water, lemon juice, and lemon zest. Whisk together over medium heat.

  6. Gently whisk the dry ingredients into the saucepan until well combined. If you have a firmer fruit, add your fruit in to the beginning of cook time. If you're using a softer fruit, feel free to not cook it at all and add it in once your filling has thickened. I talk more about this at the 12:47 mark.

  7. Cook until your filling has thickened and your fruit is at your desired softness (remember this is going into the oven!). Check out my pie filling at the 21:37 mark.

  8. Set filling aside to cool.

  9. For the cake topping: whisk together the all-purpose flour, light brown sugar, salt, and baking powder.

  10. Mix the vanilla extract into the melted butter.

  11. Pour your pie filling into the prepared dish.

  12. Evenly sprinkled the cake mixture over the top of the pie filling.

  13. Pour your melted butter mixture as evenly as possible over the cake mixture. Try to not leave any dry bits behind (it's almost inevitable!). Check out my completely, uncooked dish at the _____ mark.

  14. Bake for 30-40 minutes until the top is golden brown. It will be bubbling and you may still have a few dry spots -- that's okay!

  15. Serve warm with whipped cream and vanilla ice cream and enjoy!

Notes:

  • *You can use pears, apples, a different stone fruit, whatever you'd like! Just take note of cook times.

  • If you don't have these spices or don't have a specific type of sugar on hand, no worries! Sub out the sugar for what you have and omit or sub in different spices!
